Once you master this, try it with other vegetables to replace either the cauliflower or the potato e.g. carrots, green or red peppers, mushrooms, sweet potato, even rutabaga!
Serve with a hot pita, naan, or whole wheat wrap.

What you need to make this recipe:
1 medium cauliflower
1 large unpeeled yellow or red potato
1 medium onion
2 medium tomatoes
1-2 tablespoons oil
Salt to taste
2 tablespoons chopped cilantro (optional)

When my daughter went away to college, she missed Indian cooking, but didn’t want to have to buy spices she wouldn’t use often. So I started giving her little spice packs and instructions for specific dishes. Before I knew it, word spread and I had requests from her friends and even mine. And that was the spark of a business idea.
I spent my career in the technology world. Beyond my passion for food, I am committed to creating access to early technology education for students with limited resources. It levels the playing field and it is my personal mission to support programs equipping these children for the digital economy of the future. A majority of our profits will go to supporting educational initiatives for underserved students.
