Our Porcelain Garlic is toasted in small batches just days after harvest. It's bold — savory, spicy, potent and sharp — just like a clove of raw garlic, and it showcases the depth and complexity that makes garlic such an important ingredient in cuisines around the world. It's a perfect improvement on fresh garlic, and is probably harvested more recently than the garlic bulbs in the grocery store!

This coarsely ground powder is made from fresh cloves of porcelain garlic, a large hardneck variety that's acclaimed for its size and its beautiful, papery, parchment-like creamy white skin. The garlic is grown on a small family farm in upstate New York.

The toasting process softens and sweetens some of the sharpness inherent to fresh garlic, but the flavor is potent and doesn't get lost in the cooking process: it stands up in a stew and makes its voice heard in a marinade. Add it to savory dishes for richness and unmatched flavor.

The garlic and onions that make up our Porcelain Garlic and Caramelized Onions were exceptionally fresh when they were dried. Just a few days after harvest, Tyler trucked a few thousand pounds of onions and garlic a short drive up the road to our co-packing facility, where they were immediately dehydrated, capturing the complex and intense aroma that are characteristic of only the freshest produce.
