The milk they use for their raw milk cheese comes from grass-fed Jersey Cows.  This milk is known for it's richness in quality because of it's high butterfat content.

Because their cheese is made from all-raw milk, it has to be aged at least 60 days to ensure there is no bacterial concerns.  They add no BHT or any other hormones.
