Limited Batch Cardamom Bun highlights the beauty of Burlap & Barrel’s Cloud Forest Cardamom and Royal Cinnamon, sourced directly from smallholder farmers for unmatched taste, traceability, and quality. These fragrant, warming spices are lusciously swirled throughout our heirloom Mission almond base, sweetened with a touch of Organic coconut nectar, and balanced with dashes of Jacobsen Sea Salt and real vanilla to create our ode to one of our favorite pastry case classics, the Swedish cardamom bun.
We love Cardamom Bun atop fresh pancakes, smeared thickly on toast with fresh fruit, spooned into yogurt bowls, or for a lovely transportive treat, straight from the jar. Only here through September 30!
HISTORY OF CARDAMOM BUNS
Cardamom has been present in Sweden for centuries, but it wasn’t until the past 100 years or so that the spice became more accessible to the working class. Similarly, sweet buns, usually consisting of a yeasted dough flavored with spices and twisted into a knot-like shape and glazed with sugar, have been integral to Swedish dining—especially the culturally integral fika (“coffee break” for us English speakers)—for decades. Originally only offered at bakeries, these sweet buns became more accessible for home bakers to create in the 1950s when the cost of butter, sugar, and other integral ingredients decreased following WWII. While cardamom has always been in the dough of many popular offerings, it only became a staple Swedish flavor of the sweet bun in the past 15-20 years, in part due to the rise in popularity of the cardamom bun in other major world cities.

Mark and Megan Overbay have long been passionate about making delicious food centered around culinary craft, integrity, and sustainability. The inspiration for doing so through nut butter originated from Mark’s experience as a Peace Corps Volunteer in Zimbabwe, where he missed his favorite food – peanut butter – and decided to make his own. By hand crushing locally grown peanuts and mixing in salt, honey and coconut oil, he made one of the best things he’d ever tasted. Back in Durham, North Carolina, he and his wife, Megan, who had already built a local following for her homemade energy bars, wanted to share that small-batch, handcrafted approach to food with others, and by doing so, build a business based on culinary craft, integrity, and sustainability. Big Spoon Roasters launched their lines of small-batch, handmade nut butters and snack bars in January 2011.
