This recipe starts with slices of fresh coconut meat, which we slowly toast to sweet, caramelized perfection and a perfectly crunchy texture. Developed in collaboration with our friend and legendary endurance athlete Mike Wardian, Toasted Coconut Almond Butter is handmade from fresh-roasted heirloom Mission almonds, crispy house-toasted coconut chips, Organic coconut nectar, and hand-harvested Jacobsen sea salt to create an incomparably crispy-crunchy nut butter with a delicious natural sweetness that belies its low-sugar content. Toasted Coconut is still Mike’s favorite, and he spreads it thickly on toast, bananas, and anything else he can find to fuel his world-beating adventures (like running across the whole USA). We especially love this nut butter on toast with ripe berries, in smoothie or açai bowls, and stirred into overnight oats.
They might be the best-tasting almonds in the world, but Mission almonds are also nutrition powerhouses, offering vitamin E, magnesium, and 20% more protein than other almond varieties. In addition, they require less water for cultivation, making them a more environmentally sustainable choice. Unlike many almond butter makers out there, we mill our almonds with their anti-inflammatory skins intact, further boosting their antioxidants and heart-healthy fiber in our nut butters.
Coconut meat's health benefits are attributed to its rich phenolic compounds, vitamins, minerals, and inflammation-fighting antioxidants. Eating coconut meat has been linked to cardiac health, better blood sugar control, and healthier digestion.

Mark and Megan Overbay have long been passionate about making delicious food centered around culinary craft, integrity, and sustainability. The inspiration for doing so through nut butter originated from Mark’s experience as a Peace Corps Volunteer in Zimbabwe, where he missed his favorite food – peanut butter – and decided to make his own. By hand crushing locally grown peanuts and mixing in salt, honey and coconut oil, he made one of the best things he’d ever tasted. Back in Durham, North Carolina, he and his wife, Megan, who had already built a local following for her homemade energy bars, wanted to share that small-batch, handcrafted approach to food with others, and by doing so, build a business based on culinary craft, integrity, and sustainability. Big Spoon Roasters launched their lines of small-batch, handmade nut butters and snack bars in January 2011.
