Our ground Buffalo Ginger is an heirloom variety grown in the mountains of northern Vietnam. This ginger packs a punch with its fruity, floral aroma and powerful heat. This is a complex, flavorful ginger powder that will elevate baked goods, stews, curries, and beverages from hot drinks to cocktails.

In Vietnam, this ginger is used with chicken, soup, rice, and candy. It’s also been used for medicinal purposes â€” to calm upset stomachs, restore appetite, and support the immune system. Any way you slice it, this is a spicy, wonderfully intense ginger.

Origin: Cao Bằng, Vietnam
Process: Dried with hot air, then ground

Sourcing: We've partnered with DACE, a social enterprise in Vietnam, to connect with the farmers growing our Buffalo Ginger.
The ginger is grown by communities of Hmong farmers in Vietnam's northern highlands, who are learning to grow higher-value crops and transitioning to organic and regenerative agricultural methods. We're honored to support them in that work, and to share their spicy, zingy ginger with you!

They’ve eliminated the intermediaries who have traditionally bought and sold spices multiple times before any jar of spice lands in a U.S. customer’s kitchen cabinet. This means their spices are fresher than what you can find from the big spice companies. Spices so potent that they suggest new customers use just half a serving at first, as they sometimes get feedback from customers that the spices are too strong. It's not that the spices are too strong, but rather we are just accustomed to cooking with old spices! Did you know that supermarket spices sometimes have been in transit for three years?!?!?

Another benefit to eliminating spice brokers is that Burlap & Barrel can pay the farmers more for their crops while offering quality spices to the public at affordable prices.

Mainstream conversations around food sustainability rarely consider the people involved in growing, harvesting, transporting, processing and cooking food. Sustainability is discussed in terms of environmental impact, or the comfort of livestock providing meat, dairy or eggs.
