We use four kinds of mushrooms: oyster, shiitake, porcini and portobello all paired with overripe tomatoes, sage and garlic making this sauce very decadent, but clean and healthy. Its ragu-ish flavor can only be achieved in small batches which is the only way we cook here at the Saucery. Mix with your favorite pasta shape, cook up a chicken marsala or even a delicious-hearty-mushroom soup.
We source local upcycled tomatoes, that would ordinarily go to waste, and turn them into delicious sauces and condiments for everyone to enjoy. We're helping people change the way they think when food shopping. Overripe tomatoes and oddly shaped carrots should get cooked, not tossed.
