Organic Nectars Agave Nectar is harvested from living plants. The top of the plant is sliced off and the core is hollowed out. The plant is then capped with a stone. It then secretes its nectar into the center of the plant rather than into flowers like most plants do. It collects in the hollow center for a few days, after which the liquid is removed similar to tapping a tree to collect maple syrup. The production of agave nectar is very similar to how a bee creates honey. The bee adds enzymes to the complex sugars of nectar, which changes it into the simple sugars making honey. Enzymatic action is also what causes the complex sugar found in agave juice to be changed into a simple sugar sweetener and become agave nectar. Agave has been used by natives for centuries. In fact, back in 499 A.D. a Buddhist monk named Hwui Shan is believed to have voyaged to North America, almost 1,000 years before Columbus, and named the continent Fu Sheng, the Chinese name for the agave plant, considered sacred.
